When Shah Ghouse opened in 1968, Tolichowki was a quiet stretch of road. Today the queue spills onto the street at 9 PM and the dum-pots are loaded again at midnight. The recipes haven't changed. The masala is still ground in-house. The dum is still wood-fired.
During Ramadan, our doors don't really close. Iftar to sehri, the haleem keeps coming. Cricket-watching uncles and Old City grandfathers take the same table their fathers did. Thats not nostalgia — thats the business.
